Easy Baked Meatballs

March 9 is apparently National Meatball Day, so I figured it was an excellent time to share my meatball recipe with you.

I love that I can just whip up a batch, throw them in the oven, and I’m done in like 20 minutes.

They’ll pair very well with some zucchini noodles (zoodles) and homemade marinara sauce.

When I was on the Autoimmune Protocol (AIP), I would have 2 for breakfast along with some sautéed greens, a mug of bone broth, and maybe a side of berries. This would keep me more satiated for the next few hours than a simple sugary bowl of cereal. And no “hanger” here!

ingredients

  • 2 lbs ground beef, pork, or a mix of both
  • 2 teaspoons dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3/4 to 1 teaspoon sea salt
  • 1/2 teaspoon garlic powder (omit if eating low-FODMAP)
  • 1/2 teaspoon onion powder (omit if eating low-FODMAP)

directions

  • Preheat oven to 350F degrees.
  • Combine rosemary, thyme, oregano, salt, garlic powder, and onion powder. You may want to run everything through a spice grinder if you have one.
  • In a large mixing bowl, combine meat with the rest of the ingredients and mix thoroughly. I find that using my hands works best. Try not to over-work or they’ll become tough and dry.
  • Roll into 2-inch balls and place on a large rimmed parchment-lined cookie sheet.
  • Bake for 16-18 minutes. Feel free to cut one in half just to make sure it’s done inside. Serve immediately. Leftovers can be stored in an air-tight glass container in the fridge for up to 5 days. They freeze very well. And that’s it! Easy-peasy!

  1. I finally had a chance to try your meatball recipe and I’m glad I did. The flavor is great! Unfortunately I think I over-worked them (even though I tried not to!) and left them in the oven a little too long so they were a bit tough…but they still tasted good!

    • I sometimes overwork them too, but then I add some homemade tomato sauce and they still taste amazing. Thank you so much for trying them and letting me know!
